INGREDIENTS->
1 med eggplant cut in chunks
1 Zucchini cut in chunks
1 yellow squash in chunks
2 medium Yams
2 med. Vidalia Onions sliced
1 Large Red Pepper
1/2 tsp of salt
1/2 tsp pepper
1/2 cup of Olive Oil (coconut oil may be used)
DIRECTION->
Preheat oven to 400 degrees
Combine all ingredients in a large bowl with Olive Oil, Salt and Pepper. Bake for 40 minutes. Enjoy!!!
